Rather than sourcing oil anonymously, we wanted to be involved in the process ourselves — from harvesting the olives by hand to bringing them directly to the mill for pressing.
Harvested by Our Team
This year’s olives were picked by hand by our own team. Members of our kitchen spent time in the grove, taking part in the harvest and experiencing firsthand the work, patience, and attention required long before any ingredient reaches the plate.
The goal was not volume, but understanding. Being present at the harvest creates a different relationship with the ingredient — one rooted in responsibility and respect.
From Harvest to Extra Virgin Olive Oil
Once harvested, the olives were transported directly to the olive mill, where they were processed without delay. The milling itself was carried out by professionals, ensuring proper cold extraction and preserving the natural qualities required for true extra virgin olive oil.
Our role was clear: to harvest with care, and to ensure the olives reached the mill in optimal condition. The result is a fresh, expressive extra virgin olive oil with balanced bitterness and a gentle peppery finish — a reflection of both the season and the hands that picked it.
Why This Matters to Us
Producing our own extra virgin olive oil is not about claiming ownership of a process that belongs to many skilled people. It is about involvement.
By harvesting the olives ourselves and following them through to pressing, we gain a deeper understanding of the ingredient we use every day. In our kitchen, this oil is treated with intention — primarily as a finishing element, where its freshness and structure can be appreciated without distraction.
