Green Chef’s Menu at Makarun – New 8-Course Vegan & Vegetarian Fine Dining in Split

At Makarun, we believe that fine dining should celebrate not only the richness of the Adriatic but also the endless creativity of vegetables and plants. Inspired by the rhythms of our own garden and the Dalmatian seasons, our team of chefs has created a brand-new Green Chef’s Menu, available in 8 courses or a lighter 5-course option.



The Green Chef’s Menu

Designed to be fully vegetarian and entirely vegan-friendly, this menu takes you on a journey of textures, colors, and flavors that highlight the very best of nature. Dishes such as Garden Spread, Roots Tartare, and Dalmatian Layers tell a story of tradition and innovation, while desserts like Sweeten the Palate and Finish it Sweet close the experience on a high note.

This menu is not only for vegans or vegetarians – it is for anyone who wants to discover just how rich and exciting plant-based cuisine can be.

 

Vegan à la Carte Options

For guests who prefer to dine à la carte, we are also introducing dedicated vegan dishes:

Vegan Tartare – beetroot, avocado, vegan feta cheese

Red Makaruni – vegetables, chilli, hummus

Vegan Lasagne – zucchini, cashew, millet

Each plate has been thoughtfully crafted to reflect our philosophy of minimal intervention, respect for ingredients, and a deep connection to Dalmatian tradition.

 

With this addition, Makarun becomes one of the few fine dining restaurants in Split to offer a complete vegan tasting menu alongside our celebrated seafood and meat menus. We are proud to offer our guests the choice to explore the best of our cuisine in a way that suits their lifestyle and values.
