Restaurant Makarun chef Franko Brečić recently led a culinary masterclass at the private Wallner Hospitality School, presenting advanced techniques in filet mignon preparation and the traditional Dalmatian pašticada.
The educational workshop focused on the professional handling and preparation of filet mignon, one of the most refined and delicate premium beef cuts. Students were introduced to precision butchery, temperature control, roasting techniques, sauce development, and the importance of ingredient quality in modern gastronomy.
Alongside contemporary culinary techniques, Chef Franko demonstrated the preparation of traditional Dalmatian pašticada made from filet mignon — combining authentic heritage cuisine with a refined fine dining approach. Through the masterclass, students explored the balance between preserving local culinary identity and elevating traditional recipes through modern execution.
The workshop was designed as an interactive hands-on experience, allowing students to participate directly in the preparation process while learning about professional kitchen organization, fine dining standards, and the philosophy behind contemporary Dalmatian cuisine.
