Last winter, our team had the privilege of spending a training period at COB Restaurant in Portorož, Slovenia – one of the most inspiring fine dining destinations in the region.
COB, short for “Cooking Outside the Box”, is a Michelin-starred restaurant that combines creativity, sustainability, and a deep respect for local ingredients. Led by Chef Filip Matjaž and his talented team, COB delivers a culinary experience that is as thought-provoking as it is delicious, bringing together the flavors of the Adriatic Sea and the Istrian countryside.
During our stay, we had the chance to learn first-hand from their philosophy: precision in execution, harmony on the plate, and storytelling through food. The attention to detail, the passion for authenticity, and the drive to push boundaries left a lasting impression on us both as professionals and as lovers of gastronomy.
